Seafood Gumbo

Bring 3 quarts of water to a boil in a 5 quart pot.  In separate skillet add ¼ cup vegetable oil
and sauté ½ cup bell pepper, 1 ½ cups chopped onions, 4 pieces chopped garlic, & ½ cup
chopped celery.  Remove skillet from heat and dissolve 1 cup Southern Seasonings Roux (1/2
jar) with vegetables.  
Add roux and sautéed vegetables to boiling water and cook for 1 hour.  Add 1 pound of
crabmeat and 1 pound of shrimp.  Season with
Cajun Seasonings to taste.  Cook for 30
minutes.  Add 2 tablespoons of chopped green onions and cook for 15 minutes.  Serve over
steamed rice.  (Serves 4-6)
