
Red Beans And Rice, Oh La La

1 lb. Dried Red Beans
3 large onions, chopped
3 bell peppers, chopped
2 quarts water
4 cups cooked rice
1 lb. ham cubed
1 lb. sausage links slices in ½ inch pieces
2 cloves garlic, diced
Salt, black pepper, cayenne pepper & hot sauce to taste. Be careful of the salt since there is
already ham and sausage.
Sort bean and discard any stones. In large pot, soak beans in enough water to cover plus 2
inches. Add 1 tsp. salt. Soak overnight. Rinse beans; boil in water with onions, peppers, garlic,
salt, pepper. While beans boil, sauté ham and sausage and add to beans. Cover, simmer for 1 ½
hours or until beans are soft. Add small amounts of water as needed (not too soupy) . Remove 2
large spoonfuls of beans to a saucer and mash with a fork, return to pot. This will make the
beans thick and creamy. Simmer for 15 minutes longer. Stir the beans often to prevent sticking.
Serve over the hot rice. Serves 6
