Dirty Rice
1 lb. ground beef
1 onion, chopped
½ bell pepper, chopped
1 stalk celery, chopped
½ cup green onions, chopped
1 t dry mustard or 1 T prepared mustard
2 t lea & Perrin’s sauce
1 t salt
½ t red pepper
1 can chicken stock
½ cup red wine (optional) but encouraged
1 cup rice
Cook rice and set aside. In a heavy pot braise meat in 1 T oil. Cook until brown and add all other
ingredients, except rice. Cook on medium heat for 20 minutes, then simmer for 2 hours. Just
before serving add cooked rice and little at a time and mix thoroughly.
