Crabmeat au Gratin
1 large onion, chopped
1 ½ ribs celery, chopped
½ lb. margarine
4 T flour
1 large can evaporated milk
1 small can evaporated milk
2 egg yolks
2 lbs. fresh crabmeat
Slap Ya Mama Cajun Seasoning to taste
Grated cheese
Put margarine in skillet and sauté onions and celery until soft and clear. Add the flour and
blend with the margarine, then blend in the milk. Cook until thick. Remove from heat; add
egg yolks, crabmeat, salt and pepper and grated cheese. Transfer to buttered casserole and
top with grated cheese. Bake at 350 degrees for 15 – 20 minutes or until cheese is melted.
