Chicken Gumbo
Basic Roux
1 large hen, cut up
1 large onion, cut up
Slap Ya Mama Seasoning to taste
3 stalks, celery
Approximately 4 quarts water
Cooked Sausage, Shrimp or Oysters, optional
Cutup up hen and season. Brown in 1 T oil, then add approximately 4 quarts of water. Let
come to a boil. In separate pot make roux; and when brown enough, add onions. Let cook for
a few minutes, then add 1 cup cold water. Let come to a boil and well blended. Add to
chicken and water. Add celery and other seasonings. Let cook on low heat until chicken is
tender. Cooked sausage, oysters or shrimp may be added for the last 10 or 20 minutes of
cooking time.
