Cajun Stuffed Pork Chops
4 large pork chops - about 1” thick
2 tbls parsley flakes
1/2 cup diced onions or green onions
1/2 lb fresh pork sausage - fresh Cajun sausage is best. (of course!)
Slap Ya Mama Original Cajun Seasoning - to taste. Use the Hot Blend if you need more hair on
your chest.
In a mixing bowl combine sausage, parsley, onions and seasonings. Mix thoroughly. Cover
and set aside. Lay the chops on a flat surface and make a deep slit in the side of each - almost
to the bone. Spread the slit open wide. Stuff each chop firmly with the sausage mixture.
Season the chops with Slap Ya Mama seasoning - be sure to rub it in to the grain of the meat
on both sides Bake @ 350 1 1/2 - 2 hours or till they are completely cook throughout. These
work well on the grill also, but be sure not to cook @ too high of a temperature - the outside
of the chop will dry out before the sausage is completely cooked.
