Cajun Potato Salad

2 lbs small red potatoes
½ cup red onion chopped
½ cup red onions sliced
¼ cup fresh parsley minced
6 tbls cider vinegar, divided
½ lb precooked smoked kielbasa or Cajun sausage sliced
6 tbls olive oil or vegetable oil
1 tbls Dijon mustard

In large heavy pot, sauté onions, peppers, celery.  Add tomatoes, meat, seasonings , water.  
Bring to a boil, simmer ½ hour.  Add uncooked rice.  Add a little more water to keep to the
same level.  Cover pot & simmer for 1 hour .  Add green onions, shrimp. Simmer until rice is
tender.
Serves 6-8
