Cajun Jambalaya

Jambalaya has many different variations.  Each produces its own distinct flavor.  In Cajun
Country we use pork, pork sausage, chicken or shrimp.  Be creative use a little of all four
meats or your own ideas.

1 Chicken boiled, deboned & chopped
Or 2 lbs shrimp
And or 1-2 lbs smoked sausage, sliced and sautéed.
And or 2 lbs pork meat, browned and chopped
3 cups canned tomatoes, chopped
3-4 dashes
Slap Ya Mama Cajun Pepper hot sauce
½ cup oil
2 quarts water
1 cup green onions
3 onions, chopped
3 bell peppers, chopped
4 stalks celery, chopped
½ tsp. garlic powder
3 cups uncooked rice
Salt, black pepper & cayenne pepper to taste.

In large heavy pot, sauté onions, peppers, celery.  Add tomatoes, meat, seasonings , water.  
Bring to a boil, simmer ½ hour.  Add uncooked rice.  Add a little more water to keep to the
same level.  Cover pot & simmer for 1 hour .  Add green onions, shrimp. Simmer until rice is
tender.
Serves 6-8
