Beef Tongue - Smothered


1 tongue, cleaned
1 small onion
2 stalks celery
3 T bell pepper
1 clove garlic
Slap Ya Mama Cajun seasoning to taste
¼ cup red wine



Cut tongue into pieces about 2” thick.  Season well with Slap Ya Mama seasoning.  Brown well
in butter or 1 tablespoon oil, turning often.  Turn heat to low and add onions, bell pepper and
garlic which have been chopped.  Let cook until tongue is tender, about 1 ½ hours, then add
red wine and let cook about 20 minutes longer.  Serve with French bread.
