Basic Roux

We sell Roux already prepared, that will save you a lot of time and stirring.  
Southern Seasonings Premium Roux.  
Or follow directions below

1 cup flour
½ cup oil

Heat oil in heavy pot or saucepan and add flour. Turn heat down to low or medium and stir
continuously until it is a light dark brown.  Do not over brown because roux will have a burnt
and bitter taste.  Cook to a light chocolate brown.  Roux should not be made on high fire and
should be stirred continuously to assure the breaking up of the flour granules which will
assure the roux will mix with the water.  This roux should be stored in the refrigerator in a
tightly covered container.
